Drömkakor - Cookie Dreams

These cookies are a sort of hybrid, somewhere between a normal Swedish cookie and a "Dream" (dreams are small round cookies with a very tender, sandy, melt in the mouth texture - I will post a recipe in the future). They are slightly firm and crispy and so, so good with a cup of coffee. The texture, combined with the cinnamon and vanilla flavor, is delightful. This is an old recipe I found in my grandmother's recipe book.

Makes approx, 40 cookies.

200 g. butter
2 dl sugar
2 tsp vanilla sugar
1 tbsp cinnamon
1/2 hjorthornssalt (baker's ammonia) or 1 tsp baking powder
5 dl flour

Mix butter and sugar together until light and fluffy.

Combine vanilla, cinnamon, baker's ammonia and flour. Add to the butter mixture.

Split the dough in four, and roll into ropes. Set in the fridge to rest for an hour or so.

Set the oven to 175 C (347 F).

Cut the dough lengths into 0.5 cm slices and roll into balls.

Place on a baking sheet covered in baking parchment, bake on middle rack approx. 20 minutes.
