Snabba äppelkakan - Quick and Easy Apple Cake

Now I will share the recipe for one of my quickest and easiest cakes to bake. It has been a lifeline many times when unexpected guests have shown up, craving coffee and fika. It is delicious and has few ingredients, which is always a bonus!


4 eggs
3 dl sugar
3 dl flour
3-4 baking apples
sugar (and if desired, cinnamon) 

75 g cold butter


flaked/ chopped almonds and icing sugar

Grease a cake tin (preferably one with a detacheable bottom), approx 24 cm diameter, and dust with flour or bread crumbs.

Peel apples and cut into wedges. Pour sugar and cinnamon (if using) into a ziplock bag and add the apple wedges, give it a shake to coat the slices. The amount of sugar to use depends on how sour or sweet your apples are.

Whisk eggs and sugar, mix in flour.

Pour batter into tin. Press apple pieces into the batter.

Take the cold butter and cut slivers (using a cheese cutter if you have one or make as thin slices as you can) and cover the cake with butter shavings. 

Sprinkle with almonds.

Bake in 175 C oven (350 F) for about 50 minutes. 

When the cake is cooled, dust with icing sugar.

Serve with whipped cream or vanilla custard. Ice cream is also lovely. Or just eat it on its own! I hope you enjoy it!
