Makalösa apelsin och chokladkakan - Unparallelled Orange and Chocolate Cake
This is a recipe for a yummily soft sponge cake with gorgeous flavor. Everyone who has tried it loves it! The recipe is originally from the Rosendahls castle café cookbook. This time I decorated it with candied orange peel. Sometimes I make chocolate shaving instead. That looks lovely also!
2.5 dl sugar
juice and zest of 1 medium orange
5 tbsp candied orange peel
4 dl flour
1 tsp baking powder
80 g chocolate
chocolate shavings/ candied orange peel
Mix butter and sugar until white and fluffy. Add the eggs one at a time and mix well. Add the candied orange, juice and zest.
Sift together flour and baking power and add to the mixture, combine. Chop the chocolate coursely and mix it with a little bit of flour to keep it from sinking to the bottom of the cake. Stir into the batter.
Pour the batter into a greased and lightly floured springform cake tin (23 cm diameter), and bake in a 150 C oven (300 F) approximately 40-45 minutes. It should not be completely dry but have a little spring to it.
Grate some chocolate over the top, sprinkle with candied orange peel and finally dust with a little icing sugar. It is delicious served with some whipped cream
