Snabba Smörbullar - Quick Butter Buns

Here is one of my quick and easy bun recipes. They only need to rise once, and then you simply spoon the dough into the bun moulds. Simple as that, you have lovely moist buns.


Makes 30 buns.


50 g fresh yeast
100 g butter
3 dl milk
1 egg (whisk it, use half for the dough, then use the other half to brush the buns)
0.5 tsp salt
0.75 dl sugar
7-8 dl flour

Filling: 100 g softened butter, 1 dl sugar, 1 tsp vanilla sugar or vanilla extract

Garnish: almond flakes, pearl sugar, remaining egg


Crumble the yeast into a bowl. Melt the butter and add the milk to it. Let the mixture reach 37 degrees C (98 F). Pour over the yeast and stir until yeast has dissolved.

Add egg, salt, sugar and the flour. Work the mixture until it forms a smooth dough, quite wet.

Mix together the filling. Spoon dough into prepared bun tins. 

Then, using two spoons, push the filling into the middle of each bun, all the way down to the bottom.

Let rise 40 minutes. Then brush the bun with egg, avoiding the filling. Sprinkle over almond flakes and pearl sugar.

Bake on middle rack at 250 C (480 F) approx. 8 minutes.
