Studentens soppa - Student's Soup

Here is a soup that is both inexpensive, full of nutrients and easy to make, hence the name. In spite of the few and simple ingredients it is full of flavour and people always ask for the recipe!


1.5 l water
1 l white cabbage, shredded
1 vegetable + 1 meat stock cube
6 peeled raw potatoes
400 g crushed or chopped canned tomatoes
1 tsp salt, pepper
1-2 tsp dried basil

sour creme or creme fraiche to serve

In a pot, melt the stock cubes in the water. Peel and cut the potatoes into thin slices. Shred the cabbage and add all the soup ingredients to the stock.
Season with salt, pepper and basil and simmer 15-20 minutes or until the potatoes are soft. Season to taste.

Serve with a dollop of sour cream or creme fraiche, and if you want to add a bit of flair, top with some fried bacon, panchetta, sausages or croutons.
