Just Mix Together Bread
This bread is so quick and simple to make that there is no longer any excuse not to bake your own. As the name suggests, you simpy mix together the ingredients and then put it straight into the oven.
You need a kitchen assistant with a bread hook for this recipe since the dough is very heavy and working it by hand would be a considerabe effort. If you want to make it by hand, halve the recipe.
It is a dense bread that is best suited for sandwiches. You can flavor it with bread Spices such as cumin, fennel or aniseed. Make it all wheat or replace half of the amount with rye or whole grain.
0.5 l water
0.5 dl milk
3 tbsp neutral oil
3 tsp salt
2-3 tsp honey or syrup
1.8 - 1.9 kg flour - plain flour or rye flour (this time I used 900g rye and 1000g wheat)
Warm the liquids to 37 C (98 F). Crumble the yeast into the bowl of the mixer. Add some of the milk+water and stir to dissolve the yeast, then add the rest of the liquid.
Mix the rest of the ingredients in and combine.
Turn the dough out and cut into 3 loaves. Place on a high sided baking sheet covered in baking parchment.
Set the oven to 250 C (482 F) and Place the baking sheet on the bottom level. When the oven has finished warming up the bread should be done!
