Delikata Apelsinsnittar - Delicious Orange Slices

These little slices are almost like sweets. They were quickly snatched up from the cookie platters this Christmas!

Makes about 50 slices.


100 g almonds
1 dl sugar
3 dl flour
0.5 tsp vanilla essence or 1 tbsp vanilla sugar
200 g butter
0.5 egg white

200 g almonds
2.25 dl sugar
2 tbsp candied orange peels, very finely chopped, or orange marmelade
2 egg whites
2-3 drops red food coloring

1 dl icing sugar
1 tbsp orange juice


Make the dough: Blanch and peel the almonds. Ground them finely.

Mix almonds, sugar, flour and vanilla. Mix in butter and add egg whites and work into a dough. Let it rest in a cool place about 30 minutes.

For the filling, blanch, peel and grind the almonds, mix them with the sugar and orange peels/marmalade. Add egg whites and color the filling red.

Set the oven to 200 C (392 F).

Split the dough in two. On a sheet of baking parchment, dusted with flour, roll out each part into a square, 20x25 cm. If the dough tears, just patch it back together. Spread the filling onto the dough and roll together, forming two logs, 35 cm long. Lay them on a baking sheet covered with baking parchment, seam down.

Bake on middle rack until the rolls start to get golden, about  15 minutes.

Mix together the ingredients for the glaze, and spread it across the rolls. If you like, you can garnish further with some left over orange peel. Cut into slices.
