Potatisplättar - Potato Cakes



This is Southern Swedish comfort food, and very eco friendy - eco as in ecology AND economy!

People used to be much more resourceful when it came to reducing food waste. It wasn't really a choice for people in the past. Nowadays us modern folks ought to learn from this attitude. As we all know, the resources of the earth are not infinite, and there are many of us to share what there is. To throw away food is needless and very easy to avoid, once you know how to think about left overs.

This is a very good recipe to use up left over mashed potatoes. I love this dish so much that when we make mash, I make sure that we whip up enough so that we can make these potato cakes the next day. Apart from saving resources you are saving effort by preparing ahead of time and not having to come up with a dinner for tomorrow!




Potato Cakes were, and are still my little brother's favourite dish. Even though nowadays he gets to eat gourmet food at the finest restaurants, this is special. It is a slightly unusual recipe, so much so that his wife had to go to my mother's house and learn how to make these, real Smaland style!

Ingredients:

mashed potatoes
1 tbsp sugar
2 eggs
flour
salted & smoked sliced pork belly (in a pinch, use regular bacon)

What you need is cold, good - not too loose, mash made with milk and butter.

Method:

Add the sugar and eggs, and as much flour as it takes to firm it up enough so that you can roll it into a log. It should be pretty firm. Work in the dough with your hands and shape into a log. Cut into even slices. Flatten each slice a little into a nice cake.




Fry the pork and save the fat in a bowl, for frying the cakes. Pour it into a skillet and fry a couple of cakes at a time. Flip them to fry on both sides.

They are ready when they feel firm when pushing down on them with the flat back of a spatula. They should be golden brown. If there isn't enough fat to fry them all, mix in a little butter as well.

Serve with the sliced belly pork, or bacon (if using bacon, just fry the cakes in butter). Always serve with lingon! A white cabbage salad, or green salad and grated carrots.
