Skira drömmar - Tender Dreams

Here is a recipe for a famous Swedish biscuit called Dreams. I call mine Tender Dreams because they are incredibly light! It is a recipe that is easy to succeed with, and the result is truly a melt in your mouth experience. I read that this is a type of biscuit or cookie that is unique to Sweden... do try it and tell me if you have tasted anything like it! I'd love to know what you think!

Ingredients:

150 g butter
4.5 dl sugar
1.5 dl neutral flavored oil
1-2 tbsp vanilla sugar
1 tsp baker's ammonia (ammonium carbonate)
5 dl flour

Metod:

Mix butter and sugar until white and fluffy. Add oil. Mix together vanilla sugar and baker's ammonia and flour, and stir this into the butter mixture.

Set the oven to 150 C (300 F)

Roll the dough into ropes and cut into slices. Roll into small balls. You should end up with 90-100 biscuits.

Place on a baking sheet covered in baking parchment. Bake for 20 minutes without opening the oven. The baker's ammonia will give off a very strong (and not entirely pleasant) smell but this dissapates after baking and will not flavor the finished biscuits.

Taste and enjoy!
