Mormors fläskpannkaka - Grandma's Pork Oven Pancake

Here is the recipe for a simple lunch dish that is usually appreciated by both young and old. It is traditional fare in Sweden and this recipe comes from my Mormor (Grandma). It is simple and quick to make and nicely filling. 



5 eggs
1 dl plain flour
4 dl milk
0.5 tsp salt
200-300 g. smoked pork
Set the oven to 225 C (435 F).

Grease an oven pan with butter. Cut the rind off of the pork and then cut the meat into small cubes.

Whisk the egg with the flour until the lumps disappear. Mix in the milk and stir until you have a smooth batter.

Pour the batter into the oven dish. Sprinkle the pork cubes over.

Place in oven and bake for 30 minutes or until set.

Best served with a salad and lingonberry jam.
