Kanelbullar - Swedish Cinnamon Buns



The weather outside is cold and grey and dreary. It seems this winter never really got going. I miss the snow! But, I will hope for a wonderful spring instead. I was going through some old pictures and I found this one that reminds me of the spring that is hopefully around the corner. It is a quick and easy recipe for traditional Swedish Cinnamon Buns. They are perhaps the most obvious example there is of a proper fika-treat.




Quick and easy Cinnamon Buns:

Ingredients:

50 g fresh yeast
2 tbsp sugar
125 g butter, softened
1 egg
7 dl plain flour (room temperature)
2 tsp cardamom, freshly ground

Filling:
1 dl sugar
150 g butter, softened
2 tsp cinnamon

Topping:
1 egg
pearl sugar (optional: almond flakes or slivers)

Method:

Stir the fresh yeast into the cold milk until it dissolves. Add flour, egg, sugar and cardamom. Work the flour in until you get a dough.

Roll the dough out into a rectangle, 1 cm thick ( 0.4 inches). Mix the ingredients for the filling in a bowl. Spread the filling evenly over the rectangle.

Roll into a long roll, cut into approximately 30 slices. Place each slice in a paper bun cup. Whisk an egg and brush each bun lightly on top with the eggwash. Sprinkle pear sugar and almond over the top.

Let rise for an hour. Set the oven to 240 C (465 F). Bake the buns on middle rack approx. 8 minutes.

Let them cool under a clean towel. Enjoy!
